Hard Boiled Egg Bento Box
Makes 1 serving
Ingredients
2 Vital Farms Pasture-Raised Eggs
Salt & pepper to taste
Crackers
Cheese slices
Fresh fruit or veggies
Directions
1. Place the eggs in a pot of water. Bring to a boil and cook for 8-10 minutes.
2. Transfer the cooked eggs to a bowl of cold water. Let cool completely.
3. Peel and slice the hard-boiled eggs in half. Place in bento box and season with salt and pepper.
4. Fill remaining sections with crackers, cheese, and fresh fruit or veggies.
Egg-in-a-Hole
Makes 1 serving
Ingredients
1 slice of bread
1 tablespoon Vital Farms Butter
1 Vital Farms Pasture-Raised Egg
Salt & pepper to taste
Directions
1. Use a round biscuit cutter or rim of a drinking glass to press a whole into the center of the bread.
2 .Melt the butter in a pan over medium heat.
3. Set the bread in the pan of melted butter and cook for 2-3 minutes until lightly toasted.
4. Flip the bread over and gently crack the egg into the center. Season with salt and pepper. Cover the pan and cook for 2-3 minutes or until the egg is set.
Spiralized Zucchini Nest Eggs
Makes 4 servings
Ingredients
2 medium zucchini, spiralized
1 tablespoon Vital Farms Butter, melted
Salt & pepper to taste

Arugula for garnish Red pepper flakes for garnish Directions 1. Preheat oven to 400°F and prepare a sheet pan with a light coat of butter or nonstick spray.
2. Toss spiralized zucchini in melted butter, salt, and pepper.
3. Divide into 4 portions and shape into nests on the prepared pan. Create a well in the center of each nest.
4. Crack an egg into each well and bake for 15-20 minutes, or until eggs are set.
5. Sprinkle with red pepper flakes and fresh arugula. Serve warm.

¼ cup mayonnaise
2-3 lettuce leaves
2 tomato slices
Salt & pepper to taste
Directions
1. Place the eggs in a pot of water. Bring to a boil and cook for 8-10 minutes.
2. Transfer the cooked eggs to a bowl of cold water. Let cool completely.
3. Spread 1 tablespoon of the mayonnaise over both sides of the bread.
4. Heat a large skillet over medium heat and cook the bread for 2-3 minutes on each side, or until golden.
5. Prepare the sandwich with remaining mayonnaise, peeled and sliced eggs, lettuce, and tomato. Season with salt and pepper. Close and slice in half to serve.
Egg Bites
Makes 12 servings
Ingredients
1 tablespoon Vital Farms Butter
12 Vital Farms Pasture-Raised Eggs
Salt and Pepper to taste
1 red bell pepper, diced
¼ cup green onions, sliced
½ cup cheddar cheese, divided
Directions
1. Preheat oven to 350°F and grease a 12 cup muffin tin with Vital Farms Butter.
2. In a large bowl, whisk 12 eggs. Season with salt and pepper.
3. Stir in bell pepper, onions, and half the cheddar cheese.
4. Transfer egg mixture to muffin tin and top with remaining cheese.
5. Bake for about 20-25 minutes until egg is completely set.
